Do you want the story behind the cupcakes? Guess I’ll give it a go!
This year to accompany the festivities I made so cupcakes- why not? Whenever it starts to get cold I think of Pumpkin Pie and wanted to somehow incorporate pumpkin pie into the cupcakes. I searched around a lot for some ideas and came across a few ways to put the pie in your cake. This is what I ended up making: Pumpkin Pie filled Chocolate Cupcakes with Chocolate Ganache & a Candy Corn. And this is how I did it: I baked my favorite pumpkin pie with homemade pumpkin pack (only because it’s not to be had in NL), mixed up my favorite chocolate cake recipe, combined the two, topped with chocolate ganache ‘n candy. It was yummy and very autumny and Halloweeny, rich and not too sweet. For those Dutchies who want to recreate- you’ll need to make your own pumpkin pack, Candy Corn and Grease Proof Halloween Cupcake liners are imported. But, I’m sure you will improvise!

chocolate cake- my mothers vegan chocolate cake recipe, you won’t get that this easy! just use your favorite
chocolate ganache- www.joyofbaking.com with 70% Callebut chips and organic cream
tip! use baking paper to bake the pie in, scoop out the baked pumpkin pie with a mini ice cream scoop and drop on to 1/3 to 1/2 batter filled liner, then top with another dab of batter
